“Die Fledermaus” is a beer that we made to try to encapture Dano and his style of cooking. It was named by his wife Karen and was his favorite Viennese operetta. It is German for “The Bat”. We handpicked Linden Flowers from Dano’s property, zested 6 pounds of lemons, and ground 6.5 oz Tellicherry Peppercorns to be added in the boil. This has the classic aromas of a Belgian Style beer (clove, black peppercorn along with some floral notes from the flowers and a touch of lemon citrus). This beer has enough body to carry the higher alcohol content while still being very drinkable. The finish is slightly peppery from the Tellicherry Peppercorns
